Blueberry Apple Banana Bread - Recipe

Ingredients
1/2 cup virgin coconut oil (4 oz / 115g)
1 and 1/3 cups all-purpose flour (6.1 oz / 173g)
1 teaspoon baking powder (0.14 oz / 4g)
1 teaspoon salt (0.11 oz / 3g)
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 large eggs (3.5 oz / 100g)
1/3 cup almond butter (4.6 oz / 130g)
1 cup mashed banana (8 oz / 227g)
1/3 cup Plain Greek yogurt (2.8 oz / 80g)
1 teaspoon vanilla extract
1 small apple chopped into square
1 handful of frozen blueberries
Instructions :
1.Mash the bananas! Make sure you're using overripe bananas for the best taste. 🍌
2.Mix the dry ingredients: Flour, salt, baking powder, baking soda, cinnamon. Whisk it all together! 🥄
3.Mix the wet ingredients in a separate bowl: Whisk the eggs to break them up, and then whisk in the sugar! Then add the almond butter. Don't have almond butter?
4.Any nut butter will work or don't add it if you are allergic! Add in your plain yogurt, vanilla extract, and banana. Whisk until combined and there are no more lumps. Stir in your coconut oil (warm it up if it has solidified). No coconut oil? Any other oil would be a good substitute. 🥚🥄🥣
5.Mix everything together: Mix together the dry and wet ingredients until there is no more dry flour left. 🥞
6.Line your pan with parchment paper so nothing sticks! 📜
7. Pour your mixture into your pan. 🍰
8.Sprinkle frozen blueberries and apple chunks on the top. Use a knife to swirl and slightly cover fruits. 🫐🍏
9.Bake for an hour. Use a toothpick to check if it's finished. (If the toothpick comes out with small crumbs or nothing, it's done. If it's gooey, bake for a little longer) 🕑
10. Let cool for 30 min. This will help it hold its shape. Or don't wait and just eat it! 🕒🍽️
Note from Reytorra: It first started out as normal banana bread. Then I added some of my favorite things and now it's fabulous. You get some extra sweetness from the apple and frozen blueberries sweet and it's the perfect pick me up when you're hungry!
